At harvest, the grapes are delivered in small tubs and gently pressed after a short period of maceration. Fermentation takes place slowly, at a controlled temperature of 18°C in small stainless steel tanks. Clarification of the must is done by natural sedimentation of the particles.
Sauvignon Blanc Nussbaumer is vinified in small steel tanks, it is in constant contact with the lees. After bottling, it rests in the bottle for another 3 months. The total maturation period is therefore less than 14 months.
