Lo Triolet – Introd, Val d'Aosta (AO)
The pressing of the grapes takes place after a drying period of about 2 months. After a 12-hour cold maceration, fermentation takes place for 20% in barriques and for 80% in steel barrels. Aging for 12 months, keeping the wine on the fine fermentation deposit as much as possible.
