Harvested by hand and at maturity, sorting on the vine, slow pressing in whole bunches. Without malaxing and with quality juices we do need settling. Fermentation launched with native yeasts. Total malolactic fermentation, aging on lees 50/50 in vats and demi-muids for 10 months.
