For this Merlot vinified as a white wine, the grapes are harvested exclusively by hand, then destemmed and crushed. The alcoholic and malolactic fermentation is then carried out in stainless steel tanks. After 8 months of aging in new barrels and second passage, the wine is bottled and rests for another two months.
